Fish and seafood stocks are not unlimited and many of them are already overexploited. This is why Jean Pierre and Alberte Escande are committed by signing the Mr GoodFish charter supported by the Prince Albert II of Monaco Foundation to preserve biodiversity and marine resources.
Under this program, every three months, a list is established by a committee of scientific experts that takes into account the state of the resource, the size, the season and the status of the species.

Beyond our food, our life on earth is linked to that of the blue planet: water, energy reserves, favorable climate ... taking care of our maritime space, it is preserving our ecosystem.

This assertion is also shared by chef Dominique Nouvian and his sous-chef, David Castoldi, who, three times a week, go to the market stalls of Condamine, looking for specific fruits and vegetables often grown in small quantities, by local producers.
